Chicken Breasts with Tomato Basil Sauce

Ingredients

  • 4 chicken breasts, skinless, boneless Salt and pepper to taste
  • 1/4 cup flour
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 Tbsps Balsamic vinegar
  • 3/4 cup chicken broth (or bouillion cube in water)
  • 2 Roma tomatoes, diced
  • 1/4 cup fresh basil, thinly sliced
  • 2 Tbsps butter, room temp

Directions

Season chicken breasts on with salt and pepper, dredge in flour and shake off all excess flour. In hot saute pan, place oil and butter. Place chicken in pan and saute over medium heat 3-4 minutes. Turn over and continue cooking until cooked through (170 deg) approximately 3-4 minutes more. Remove chicken from pan and hold warm. To make a sauce: Place the minced shallot and minced garlic in hot pan over high heat; toss lightly and deglaze pan with balsamic vinegar. Using a wooden spoon scrape the pan to get all the flavor. Add chicken broth and tomatoes; reduce this in half (1-2 minutes) and remove from heat. Add basil, butter, salt and pepper, stir to melt butter and combine. Season to taste. Pour over chicken breasts on plate.

Slow Cooker Beans
Ingredients
  • 4 15 1/2 ounces cans great northern beans, rinsed and drained
  • 4 15 ounces cans black beans, rinsed and drained
  • 2 15 ounces cans butter beans, rinsed and drained
  • 2 1/4 cups barbecue sauce
  • 2 1/4 cups salsa
  • 3/4 cup packed brown sugar
  • 1/2-1 teaspoon hot pepper sauce
Directions
In a 5 quart slow cooker, combine all ingredients. Cover and cook on low for 2 hours or until heated through.
